It’s hard to ignore tradition, especially a culinary treasure like Pascal Olhat’s Tradition Restaurant, which closed February 14. Fans of Tradition can prepare their palates because that famous bistro is back, albeit in a different form–as a Pop-Up restaurant inside Brasserie Pascal in Fashion Island.
Tradition will be taking over the bar lounge area on Tuesday – Thursday nights beginning at 5 pm. The menu is the same “Best of Tradition” one that Pascal offered before he closed. It’s available prix fixe (2-course for $45, 3 course for $55, 4 course for $65) and a la carte. Wine pairing is also available for an additional $20 – $40.
Menu items include Escargot Cassolette, Roasted Bone Marrow, Sauteed Foie Gras, Poached Oysters, Filet Mignon with Foie Gras and Cognac Truffle Sauce, Rack of Lamb, and other classic Tradition dishes.
The Tradition Room will seat 25 guests and feature a gallery of fine art paintings plus new linens, candles and decor–although Pascal will carry on his tradition of providing his signature fresh roses at each table.
To ensure that guests get the full Tradition experience, Pascal has brought in several key servers and chefs who were fixtures at his old restaurant.
According to Pascal, “at the closing time of Tradition, besides being sad about the closing, guests would say to me, ‘We were engaged here,’ ‘Tradition is a part my life,’ ‘We celebrate our anniversary here’, etc. But there was one thing they all had in common. Everyone asked where they were going to find their favorite dish whether it was my sea bass, lamb, or duck confit. So instead of adding a just few dishes to the menu at Brasserie, I thought – why not add the full experience! As the memory of Tradition goes on, I want to not only give my guests the food they love but also the same type of special feeling.”
Pascal plans to first test the ‘pop-up’ concept at Brasserie Pascal and then take it on the road, opening ‘pop-ups’ throughout the nation where he will make special guest chef appearances.
